My mom made this popcorn for me to snack on in the weeks after I had Anna, and it was a lifesaver! This is great to have around as a filling snack that's quick to make, especially for new mommies that may need a spoonful of sugar. ;o) Anne also found that this recipe can be shaped into popcorn balls for kids.
Peanut Butter Popcorn
Ingredients:
2 bags of microwave popcorn
1 cup of granulated sugar
1 cup of light caro syrup
1 cup of peanut butter, creamy
1 cup of peanuts, honey roasted peanuts, M&Ms or whatever your heart desires
Cooking Instructions:
Pop the microwave popcorn according to package instructions and then remove any unpopped kernels (this is an important step, it's no fun to bite into a kernel during your midnight snacking raid).
In a small saucepan, mix the sugar and caro syrup and bring to a boil. Boil for 5 minutes, stirring constantly. Stir in the peanut butter.
Pour sugar/peanut butter mixture over the popcorn in a large mixing bowl. Add peanuts (or whatever you like) and mix thoroughly until popcorn is well coated. Spread out the popcorn on wax paper to cool and set, or shape into balls. Eat and enjoy!

Mandy and I were discussing making this recipe with Splenda instead of sugar (fewer calories and still tastes good), but weren't sure about the high temperatures (as she pointed out, it's basically like candy making). Off to google, and I found a pretty good link that says to substitute only 25% of the sugar for Splenda in this sort of a situation.
